Founded by Mike, a proud USAF retiree, the distillery was born from his dream to create an American-made product, generate local jobs, and build a welcoming space for friends, families, and neighbors to gather. Today, Madison County Distillery is doing just that — crafting exceptional spirits, serving up family-inspired recipes, and providing a stage for local artists.

The distillery uses fresh spring water and locally grown grains to create their vodka, gin, rum, and their newest addition — bourbon, set to release in late summer. With a commitment to sourcing local and organic whenever possible, their spirits reflect the best of Central New York’s land and community.

The kitchen is inspired by recipes from Mike’s late mother, who loved to cook and share food with others. Guests can enjoy delicious tacos, light bites, and craft cocktails that pair perfectly with the distillery’s lineup of spirits. As they like to say: “Wait, you have food? YES!!”

While they don’t typically host weddings (to avoid closing on weekends), the space is ideal for a wide range of celebrations.
